Ingredients

  • 1 14-ounce can sweetened condensed milk

  • 4 large egg yolks

  • ⅔ cup lime juice

  • 1 store-bought graham cracker crust

Whipped Cream Topping, optional

  • 2 cups heavy whipping cream

  • 2 tablespoons granulated sugar

  • 2 teaspoons pure vanilla extract

  • Lime zest, if desired

To make the pie:

Preheat the oven to 350 degrees.

In a bowl, whisk together the condensed milk, egg yolks, and lime juice until combined. Pour into the crust. Gently tap the pie against the counter-top to flatten any bubbles

Bake for 25 to 30 minutes until.

To make the cream topping:

In a high-sided bowl (so you don’t make a mess), combine the cream, sugar, and vanilla. Use an electric mixer with a whisk attachment to whip the cream until stiff peaks form. This means that when you dip the whisk into the cream and turn it over, it looks like the top of a soft serve ice cream cone. If you need an arm workout, use a whisk instead of the electric mixer and switch hands every 2 minutes. Pile the cream on top of the pie. If you are feeling fancy, plop it into a piping bag with a star tip and pipe little stars of cream over the surface of the pie. Sprinkle with lime zest if you want a pop of a color.
